7 lbs of Cut Honeycomb Beef Tripe
6lbs. 9oz. Canned Hominy (Faraon Brand preferably, Teasdale second choice)
6 cloves of Garlic
˝ a White/Brown Onion
1/8 Cup o f Salt (for meat)
1-2 tbsp. Salt (for chile/overall menudo)
5 Cups or so Chile California-Dried Chile Pepper (fill Blender to the top)

Meat

Rinse the meat very thoroughly. Put meat plus water (80% full pot of water) to boil at medium heat in large pot. Add ˝ an onion, salt, and garlic, let it simmer, removing the white froth. Simmer on low heat, total cook time is 2- 2 ˝ 3 hours.

Add the hominy to the pot (remember to rinse it when you take it out of the can) and let boil for another 10 minutes or so. Add Oregano 1 pinch (1 teaspoon approximately).

Chile

1L of water, 3 large garlic cloves, 1 tablespoon of salt, add Chile California (remove top, and seeds (if you like), and rinse before adding to the Blender). Blend well. Pour mixture into strainer (cuelalo) and add to pot. Add water to chili mix if needed (if too espeso (thick)—add ˝ cup to 1 cup of water). Let boil for another 7-10 minutes. Check to see if you need to add salt.
