Yeast Dough
1 qt milk
1 c shortening
2 yeast cakes
3 to 3 1/2 pounds sifted flour
4 tsp salt
Topping:
3 lbs bulk pork sausage
4 lbs ground beef
1 tsp salt
1 tbsp powdered sage
3 tbsp leaf oregano
7 8 oz cans tomato sauce
6 cups grated American cheese
1 cup grated Parmesan cheese
Parsley flakes

Directions:
Directions:
Dough: Scald milk. Add shortening and cool to lukewarm temperature. Add yeast and let soften about 10 minutes. Add 3 lbs of flour and salt. Mix thoroughly. Knead dough about 5 minutes. Add more flour, if necessary. Place on greased pan. Cover with clean cloth and let stand in warm place until double in bulk. Divide into portions according to number of pans. Use 2 pans 26x18" or 4 pans 18x12". Punch down dough and pat or roll to 1/4 inch thickness. Arrange topping on dough and bake in 425º oven for 20 minutes. Yields 48 2x5" servings.
Topping:
Brown pork sausage. Add ground beef and continue browning. Pour off drippings. Add salt, sage and oregano. Spread tomato sauce over dough reserving 1 cup. Spread cheese over sauce. Arrange seasoned meat mixture on cheese. Spread remaining tomato sauce over all. Sprinkle with Parmesan cheese and parsley flakes.
