Applesauce or plain yogurt can be used to substitute shortening or butter in many baking recipes. Equal parts. The result may be slightly different (ex. cookies may be more cake-like than chewy) but it's great if you want to make your recipe lighter. I used applesauce to substitute shortening in a waffle recipe and they turned out great- the family couldn't tell the difference!

Applesauce can also substitute eggs if you are out. 1 egg = 1/2 cup applesauce.
