1 lb. ground beef
1 1 lb. can tomatoes
1 6-oz. can tomato paste
1/2 c. water
1/2 c. chopped onion
1 Tbsp. chili powder
1 1/4 tsp. salt
1/2 tsp. pepper
2 c. sharp cheddar cheese
1 28-oz. can red enchilada sauce
1 8-oz. pkg. tortillas

Directions:
Directions:
Brown meat, drain. Stir in tomatoes, tomato paste, water, onion and seasonings. Simmer 10 minutes. Scoop some meat mixture and cheese on tortilla and roll up tightly. Place seam side down in 13x9" baking dish. Top with enchilada sauce and remaining cheese. Cover with aluminum foil. Bake at 375º for 25 minutes.
