whole fresh rosemary leaves
seasoning salt
pepper
butter
red wine
mint jelly

Directions:
Directions:
Season the rack of lamb (or chops) with rosemary, salt and pepper. Saute in butter until browned on all sides. Put into 350º oven until the rack is rare in the center. (use meat thermometer). Chops should bake about 10-15 min. to 150-160º.
In the meantime, deglaze the sate pan with the red wine, and then add mint jelly. Boil rapidly until the sauce is reduced to a thick consistency. Remove the lamb from over and pour sauce over meat to serve.
