2 raw racks of baby back ribs
1/2 c. diced onion
1/2 c. diced celery
1/2 c. diced carrots
2 c. water
salt and pepper to taste

Sauce
1/2 c. tomatoes, diced
1 c. of your favorite barbque sauce
2 T. honey
1/2 t. hot sauce
2 T. garlic, minced
2 T. parsley
1 t. smoke flavor
1/2 t. celery salt

Directions:
Directions:
Meat: Preheat oven to 325º. Rub ribs with salt and pepper and then place with vegetables in a heavy baking pan. cover with water and cook, uncovered, for 30-35 minutes. Set ribs aside.
Boil liquid until volume is deceased by half and set aside. Combine sauce ingredients and add to rib liquid. Cook over medium heat for 30 minutes.
Take ribs and cut between bones 75% of the way through. Cover with 1/2 of the sauce and finish on your barbque grill for three minutes per side. Continue to based ribs with remaining sauce while finishing on the grill.
