½ roll sugar cookie dough
1 tsp. vanilla
½ cup apricot preserves
¼ cup water or juice from fruit (use half or more of the ¼ cup as desired)
8 oz. cream cheese
½ cup sugar
Assorted fresh and canned fruit (strawberries, grapes, peaches, mandarin orange sections, sliced pineapple, bananas)

Slice cookie dough 1/8” thick and place close together on a 14” pizza pan. Let dough soften and then pat down to cover the entire pan. Prick dough and back crust until lightly brown at 350º for about 12 minutes. Set crust aside and let cool. Beat cream cheese, sugar and vanilla until smooth. Spread on cooled crust. Peel, slice and drain fruits as necessary. Arrange on cheese filling. Blend preserves and water – spread over fruit to prevent discoloring.
