1 ½ Cups flour
½ teaspoon baking soda
¾ teaspoon salt
½ Cup margarine
1 Cup sugar
1 egg
1 teaspoon lemon juice
1 or 2 teaspoons grated lemon peel

Directions:
Directions:
Sift together flour, soda, and salt and set aside. Cream margarine & sugar thoroughly. Add egg, lemon juice, and peel, beating until fluffy. Gradually add dry ingredients , mixing well. Refrigerate for 10 minutes. Divide dough in half and mold each half into long rolls in foil wrap. Chill or freeze until firm. With a sharp knife slice cookies ½ inch thick and place on a greased cookie sheet. Bake at 400º degrees for about 6 minutes or until lightly brown.
