1 bag spinach
1 head bib lettuce
1 pint fresh strawberries, sliced
1/2 C caramelized pecans(see directions below)
Dressing:
1/3 C raspberry vinegar
3/4 C canola oil
1/4 - 1/2 C sugar
1 T poppy seeds
2 tsp dried, minced, onion
1/4 tsp salt

Directions:
Directions:
To caramelize pecans: Break pecans into pieces. Put in hot skillet with about 1 T sugar. Stir constantly until pecans begin to smoke. Pour immediately (watch carefully or they will burn) onto wax paper and cool.

Variations: Instead of strawberries, I often use craisins and sliced apples. (Soak apples in Fruit Freshİ to keep from browning.) Feta cheese can be added to this salad. Any combination of greens can also be used.
