2 cups lightly salted sweet onion, chopped medium
1 cup melted butter
4 cups crushed saltines
1/2 tsp. curry powder
3 cups scalded milk
1 tsp. salt
3 eggs, lightly beaten
1 1/2 cups grated cheddar cheese
Grated parmesan cheese
Paprika


Directions:

Toss crackers with melted butter until coated. Add curry powder. Line 9 X 13 pan with 3/4 of cracker mixture. Spread onions over crackers. Sprinkle cheddar cheese over top. Combine milk, eggs and salt and pour over ingredients in pan. Sprinkle on balance of crackers and then light layer of parmesan cheese and paprika. Bake at 375 degrees for 25 minutes.

Absolutely delicious! Bowers Harbor Inn is a fantastic restaurant in a beautiful old farm house at the end of the peninsula in Traverse City. I asked for the recipe one evening while dining there several years ago and couldn't believe they actually gave it to me!
