3 lbs. chicken thighs, boned and cubed
3-5 Tbsp. cornstarch
1/4 C. vegetable oil
1 Tbsp. sesame oil
2 cloves garlic, minced
1 tsp. minced fresh ginger
1/4 tsp. salt
1/4 tsp. pepper
2 Tbsp. sherry
1/2 C. water
1 Tbsp. cornstarch
1 1/2 Tbsp. brown sugar
1/2 C. oyster sauce
1/2 C. chopped green onion
1/2 C. chopped Chinese parsley
lettuce leaves

Directions:
Coat chicken with cornstarch. Heat oils and saute garlic and ginger until browned. Stir fry chicken on high heat, sprinkling with salt, pepper and sherry, until chicken is browned. Reduce meat to medium. Dissolve cornstarch in water. Add sugar and oyster sauce, combining well. Pour over chicken. Add green onions and parsley. Serve on lettuce leaves.
