2 bunches green onions, chopped
1 cup butter
2 stalks celery, finely chopped
2 carrots, finely chopped
1/2 bell pepper, finely chopped
6 potatoes, finely diced
1 quart half and half
2 pints whipping cream
Salt and pepper to taste
1 pt. sour cream
4 cups shredded cheese
1 cup flour

Directions:
Directions:
Melt butter in a large pot. Add vegetables, including potatoes. Pour in enough water to just cover vegetables. Cook until tender. Mix flour with half and half. While whisking vegetable, slowly pour mix. Cook until thickened without boiling. Add whipping cream, sour cream, and 1/2 the cheese. When serving, sprinkle shredded cheese on the top. Can also be topped with bacon bits.

For a less fattening version, eliminate the sour cream and use buttermilk instead. Use milk instead of half and half and whipping cream.
