1 lb. ground beef
1 onion chopped
1 clove garlic
1 pkg. taco seasoning mix
1 can red beans
1 can (7 oz.) green chilis
1 cup frozen corn
1 can olives, sliced
2 thinly sliced carrots
6-8 cups water
Tortilla chip or tortillas (flour or corn)
Sour Cream
Avocado, sliced (optional)

Directions:
Directions:
Brown ground beef and drain off excess fat. In a pot, add cooked ground beef, and rest of ingredients. Cook until carrots are tender. Serve in bowls and add shredded cheese over the top, then a dollop of sour cream, and a slice of avocado. Serve with tortilla chips or warm tortillas.
