1 lb. lean ground beef
1 large onion, chopped
1/2 lb. mushrooms, sliced
1 tbsp. chili powder
1/2 tsp. oregano leaves
1/2 tsp. ground cumin
1/4 tsp. garlic powder
2 cans (15 oz.) kidney beans, drained
1 can (15 oz.) tomato puree
3 cups water
3 beef bouillon cubes, crushed
1 can (12 oz.) Mexican-style corn, drained
Salt and pepper to taste
1/2 C. shredded Cheddar cheese

In a 5-quart pan, cook the beef, onion, and mushrooms over medium-high heat until meat loses its pink color and vegetables are limp; drain off fat. Stir in the chili powder, oregano, cumin, garlic, beans, and tomato puree. Then add the water and bouillon cubes. Cover and simmer gently for 20 minutes.

Stir in the corn and simmer another 10 minutes. Season to taste with salt and pepper and sprinkle on shredded cheese.
