Cabbage heads uncooked

cut cabbage into desired pieces. place about 1/2 gal. into large stone jar at a time. sprinkle 1 level tsp. and a quart of water on it. add another layer of 1/2 gal. cabbage and more salt and water and so on until out of cabbage or room. Juice should be over the cabbage. Put a plate on top of mixture with a clean rock to hold it down so juice is over plate. Fermenting starts in 3 days. Ferment 3 weeks then heat kraut and can it.

Just a fun thing to remember how it was. I can remember helping my Mother and Grandmother do sauerkraut. now i buy it in a can.
