2 tbsp. butter
2 tbsp. flour
3/4 c. vegetable or chicken broth
1 1/4 c. milk
1 1/2 c. cheese of your choice

Melt butter over medium-low heat. Add flour and stir for 2 minutes, to remove the raw taste from the flour.

Whisk in broth, removing any clumps. After all broth has been incorporated, add the milk and continue to stir. Increase the heat to medium - medium high, stirring until the sauce begins to boil. When the sauce begins to boil (and you will see it thicken), continue to cook the sauce, while stirring, for another 1-2 minutes.

Remove the sauce from the heat and stir in the cheese.

Use mozzarella and Parmesan cheeses to top pasta, or cheddar to top veggies or nachos - be creative!
