1/2 lb. pork sausage meat, 1 lb. ground beef
1 large onion diced
1 large clove garlic, minced
1 medium green pepper, chopped
1 28 oz. can tomatoes
1 8oz. can tomato sauce
1 tsp. salt or to taste
1/2 tsp. basil
1/2 tsp. oregano
1/2 tsp. sage
1/4 tsp. pepper
4 large zucchini (about 2 lb.)
2 tbsp. oil
celery salt or garlic salt to taste
1/2 lb mozzarella cheese sliced
grated Parmesan cheese (optional)

In large skillet brown sausage. Add ground beef and brown. Drain fat then add onion and garlic and saute until tender, stirring occasionally. Trim ends of unpeeled zucchini and cut length wise in 1/4 inch slices. Pour oil onto a cookie sheet and brush both sides of zucchini with the oil. Arrange zucchini slices slightly overlapping in the pan and sprinkle with celery salt. Bake in preheated 400º oven for 10 to 15 minutes or until crisp tender. Reduce heat to 325º. Cover bottom of 13x9 inch baking dish with about 1 c. meat sauce. Layer half the zucchini, slightly overlapping, then half the mozzarella. Repeat layers. Bake for 45 minutes. Skim any fat from the top and let cool for 15 minutes before serving.
