2 c. cooked goose meat
Beef bullion cube
Onions
Celery leaves
1 c. mushrooms, sliced
1 1/2 T. butter
1 1/2 T. flour
1 1/2 c. goose broth
1 1/2 t. prepared mustard
1 c. sour cream
paprika
parsley sprig

Directions:
Directions:
Cut goose into bite size pieces, simmer in salted water w/ onion, celery leaves & a beef bullion cube until tender.
Saute mushrooms in butter, add flour and broth slowly, stir constantly until thickened.
Add meat, mustard and sour cream and bring to boiling point.
Serve on buttered rice or noodles with a dash of paprika and sprig of parsley

We found this recipe one of the better ways to cook wild goose. Also, when you de-bone and cut into bite sized pieces you are better able to clean up where the shot entered..
