2-1/2 lbs. sweet potatoes (about 3 large)
2 large eggs, lightly beaten
3 Tbsp. unsalted butter, melted
2 Tbsp. brown sugar, preferably dark
1 tsp. kosher salt
1/2 tsp. ground cinnamon
1/2 tsp. ground ginger
Pinch of freshly grated nutmeg
Freshly ground black pepper
1/4 C coarsely chopped pecans, optional

Preheat the oven to 400º. Put the sweet potatoes on baking sheet and pierce each one 2 or 3 times with a fork. Bake for 45 to 60 minutes or until tender. Set aside to cool.

Turn the over down to 350º. Mash sweet potatoes (without skins) until smooth. Add the eggs, butter, brown sugar, salt, cinnamon, ginger, nutmeg and pepper to taste. Whisk mixture until smooth.

Butter or spray with non-stick spray a 8x8-inch casserole dish. Pour the sweet potato mixture into the pan and sprinkle the top with pecans. Back for 35 to 40 minutes until puffy.
