16 oz. frozen southern style hash browns
1/4 c vegetable oil
1 can black beans, drained and rinsed
1 can Ro-tel tomatoes, drained
2 small cans diced green chilies
1 lb hamburger
3/4 c medium salsa
1 tsp. garlic powder
1 tsp. onion powder
1 tsp. cumin
2 c shredded sharp cheddar cheese
sour cream, black olives, diced tomatoes (optional for garnish)

Directions:
Directions:
Fry hash brown in vegetable oil until browned and crispy. Drain well (I try to pat the oil off with a paper towel), and salt and pepper to taste.

Brown hamburger and drain. Mix browned hamburger with salsa, garlic powder, onion powder, and cumin. (Adjust salsa amount to desired consistency)

Mix hamburger mixture with potatoes, black beans, green chilies, and Ro-tel tomatoes and place in large casserole dish. Top with cheddar cheese.

Bake at preheated 350º oven until heated through and cheese is melted and bubbly. Serve with sour cream, black olives, and diced tomatoes (optional)

I made this one night, just pulling out ingredients that I had in the house. It turned out to be a family favorite.
