1 can shoepeg corn
1 can Mexican corn
4 stalks finely diced celery
1/2 cup minced fresh cilantro
1 bunch chopped green onion
1/4 cup shredded Parmesan cheese
1 can drained black beans
1 diced avocado
1 tsp. ground cumin
3/4 tsp. garlic & ground pepper
1/4 tsp. cayenne pepper
1/2 tsp. tabasco
1/4 cup Italian dressing

Directions:

Heat three tablespoons olive oil. Add 2 cloves finely chopped garlic, saute until tender. Cool. Whisk in juice of 1 lime. In a large bowl, combine the first eight ingredients. Combine seasonings with 1/4 cup Italian dressing and sautéed garlic. Mix and pour over vegetables. Hand toss well. Cover and refrigerate at least one hour.
