Ingredients: 2 tbsp. Diced garlic 2 tsp Olive Oil Salt & Pepper (per taste) 32oz fat free Chicken Broth 1/4 c. organic Brown Rice 2 - 14.5 oz cans of Diced Tomatoes with garlic & onion 1 - 14.5 oz can of Mixed Vegetables 1 - 16oz can of Navy Beans (strain out the juice) 1/2 pkg of pre washed Spinach 8 oz pkg sliced Mushrooms 1 cut up Zucchini

Directions:Put olive oil in bottom of 4 qt pot on medium heat. Add 2 tbsp diced garlic. Let it brown slightly then add chicken broth and rice. Bring to boil. Add tomatoes and mixed vegetables (include juice of veggies). Add drained navy beans. Bring to boil. Add cut up zucchini and mushrooms. Turn on low and let simmer for about 15 min. Stir in spinach just a few minutes before serving.
***Garnish with grated fresh Parmesan Cheese |
