Cookie Crumb Mix (See ingredient list and directions below.)
1/2 gallon vanilla ice cream
1 Bacardi concentrate frozen juice (strawberry & kiwi)

Cookie Crumb Mix:
3 c. all-purpose flour
3/4 c. chopped nuts (walnuts)
3/4 c. brown sugar (firmly packed)
1/2 lb. butter or margarine softened (1/2 lb.= 8 oz. or 1 cup)

Cookie Crumb mix--

Mix together, press firmly into 2 unbuttered cookie sheets. Bake for 15 minutes at 300º . Until it turns slightly golden brown. Cool. Crumble & store in air tight container. Makes 5 1/2 cups (You can save other half in freezer to make strawberry daiquiri dessert again later). Note: keep cookie crumb mix in freezer.

Ice cream dessert:

Take out cookie crumb mix, ice cream & concentrate to let it sit out & thaw a little until softened.
In a medium bowl mix ice cream and Bacardi together until completely mixed. Press cookie crumb mix in a large flat rubbermaid or tupperware container. Do not use metal or glass due to freezing. Pour ice cream mix onto the cookie crumb mix and top with remaining 1 cup crumbs. Freeze for about 4 to 5 hours. Slice and serve.
