1 sweet potato, peeled and cubed
1 cup broccoli chopped
1 bell pepper, chopped
2 carrots, chopped or about 1 cup
1 onion, chopped or scallions
1 cup snap peas string pulled out
1 cup raw green beans
6 tablespoons olive oil
3 cloves garlic, minced
1 teaspoon ground turmeric
1 tablespoon curry powder
1 teaspoon ground cinnamon
3/4 tablespoon sea salt
1T fresh ginger diced or 1 tsp ground ginger
3/4 teaspoon cayenne pepper
1 (15 ounce) can garbanzo beans, drained
1/4 cup blanched almonds
1 zucchini, sliced or other summer squash
2 tablespoons raisins (optional)
1/2 cup raw mushrooms, chopped (optional)
1 cup orange juice or carrot/ginger juice
10 ounces spinach

1.In a large Dutch oven or pot place sweet potato, broccoli, peppers, carrots, onion, peas, green beans and three tablespoons oil. Saute over medium heat for 5 minutes.

2.In a medium saucepan place 3 tablespoons olive oil, garlic, turmeric, curry powder, ginger, cinnamon, salt and pepper and saute over medium heat for 3 minutes.

3.Pour garlic and spice mixture into the Dutch oven with vegetables in it. Add the garbanzo beans, almonds, zucchini, mushrooms, raisins, and orange juice. Simmer 20 minutes, covered.

4.Add spinach to pot and cook for 5 more minutes. Serve!

This is a hearty dish, but it's also mild. Don't expect fire alarm curry but don't expect it to be completely tasteless either. Mix and match veggies to your taste. If you want more zing double the spices. Either way it is very yummier. Serve over your favorite rice or cous cous.

Adding in a cup of diced cooked chicken right before you simmer for 20 minutes is a fantastic way to add meat to the dish. The chicken will soak up the yummy curry juice and enhances the overall dish.
