8 large, ripe tomatoes
5 fresh basil leaves
5 garlic cloves
olive oil
salt & pepper

Directions:
Directions:
Quarter tomatoes, and toss in chopped basil, garlic, and enough olive oil to coat generously. Roast in greased baking dish at 400º for 40 minutes, or until tomatoes are broken down and crispy around the edges.

Use masher to mash down tomatoes and garlic. Season with salt and pepper. Toss with your favorite pasta, or use as pizza sauce.

Variations:
Add red bell peppers, and mushrooms before broiling
Add Parmesan cheese and red pepper flakes.
