1 lb boned, skinned chicken breasts, sliced lengthwise
2 tbsp. olive oil, divided
1 tsp. salt
8 cloves garlic, minced
1/2 lb fresh mushrooms, quartered
1/2 c sliced green onions
14.5 oz. can diced tomatoes, undrained
1/2 c chicken broth
1 tsp. cornstarch mixed with 1 tsp. cold water
1/2 tsp. red pepper flakes
1 tsp. minced fresh basil or 1/2 tsp. dried basil
2 c cooked bow-tie pasta
1/4 c chopped fresh parsley or cilantro

Directions:

Cook chicken strips in 1 tbsp. olive oil over medium high heat until juices run clear. Remove chicken from skillet, season with salt, cover, and set aside.

Saute garlic in 1 tbsp. olive oil until golden. Add mushrooms and green onions to skillet; saute for 2 minutes.

Add tomatoes, broth, cornstarch mixture, red pepper, and basil to skillet; heat to boiling; reduce heat to medium low and simmer for 5 minutes; remove from heat.

Fold cooked chicken, pasta, and parsley/cilantro into the skillet.
