Chicken Legs & Thighs (about 6 pieces of each).
2 - 3 Tablespoons of Extra Virgin Olive Oil.
About 3/4 cup Spanish Green Olives with Pimiento.
About 3/4 cup Roasted Red Pepper strips.
1 package, Goya Brand Sazon - "con culantro y achiote" flavor.

1 package, Goya Brand Sazon - "con asafron" flavor.
2 cups uncooked white rice.
Garlic Powder to taste.
Salt to taste.
3 cups Water as needed (see recipe instructions).

Directions:
In a large stock pot or Dutch oven, put olive oil and chicken. Season with the garlic powder, salt, and Sazon. Brown chicken on all sides.

Add water to pot, to cover chicken about half way. Lower flame to low to medium. Continue to cook the chicken for about one hour on low flame.

Remove chicken from pot, leaving the water in. Add rice, olives and peppers to pot. Add more water if needed just to cover the rice the width of two fingers above the top level of the rice. Bring rice to a boil, and continue boiling on medium flame until water has dissolved just to the top level of the rice. Cover the rice and lower the flame to low. Continue cooking the rice on low flame for about 20 minutes. Check the rice, if needed, continue to cook for 5 more minutes until rice is done. Add the chicken back to the rice mixture.
Gently toss together and serve.
