8 cups Whole Milk
cup Yeast
4 cups Butter, Melted
2 tablespoons + 2 teaspoons Salt
2 cups Sugar
16 ea Eggs
24 cups AP Flour
16 cups Whole Wheat Flour

Directions:
Directions:
1. Warm the milk in a small saucepan over low heat. Mix 1/3 of the milk with the dry yeast in a small bowl and let sit until the yeast has reacted; it should start foaming.

2. In a large container add the remainder of milk, melted butter, salt and sugar and beat until the sugar is dissolved. Then add the beaten eggs and bubbly yeast.

3. Add flour, 2 cups at a time, beating on high speed of stand mixer.The dough should be sticky, smooth, but not wet!

4.Turn out onto floured surface and knead until smooth and satiny, dusting with flour as needed. Place dough in greased bowl and cover. Using sheet pans cover the flat top or stove top depending on availability and allow to rise; doubling in size.

5. Punch down the dough and roll out on floured surface to a 1/2 inch thick. Cut in 3x3 inch squares and start rolling in your hand to form balls. Brush each roll Place in 2 greased 13x9" pans, cover, and let rise again until double, about 45 minutes.
Bake rolls at 350 degrees F for 20-25 minutes or until golden brown.
