2 # beef (top round sliced thin)
1 # Bacon
16 oz jar dill pickle spears
1 oz mustard
1 cup onion (diced fine)
1 tbsp kitchen bouquet
1 qt beef base
egg shade food coloring (yellow)
1/cup red wine (burgundy)

Directions:
Directions:
Bring beef stock to a boil and thicken with roux, kitchen bouquet & add food coloring, turn off heat and add wine. Set aside. On slice of beef (4 x 6) spead mustard, 1/2 slice of bacon, onion, pickle spear, salt and pepper.Roll beef into a roll with all
ingredients inside and hold with toothpick, and place into baking dish. When pan is full pour gravy over the top. Bake in 350* oven for 1 hour. Serve with spatzel noodles and pickled red cabbage.(Aunt Janes's) bought in jar, near pickled beets.
