1/2 - 1 lb Sausage meat
3 cups chopped fresh mushrooms
2 medium yellow onions, chopped
3 1/2 cups water
2 cups wild rice
3 1/2 (14-oz.) cans chicken broth
1/4 cup flour
1/2 cup heavy cream
1 pinch each: dried thyme, majoram and oregano
1 tablespoon salt
1/8 teaspoon pepper

Cook sausage in skillet until browned. Drain in a paper towel and set aside. Saute mushrooms in the sausage drippings, add the chopped onions and cook until onions are soft. Add sausage to onion and mushroom mixture. Wash wild rice thoroughly and drain. Bring rice to a boil in a covered saucepan. After water boils, bring temperature down to a medium boil, leave lid slighlty ajar to allow some air to escape and boil at medium-high for 15 minutes. Then, bring to simmer and allow to cook, covered, for an additional 15-20 minutes. In a separate saucepan, add the chicken broth. In another bowl mix cream with flour, then add to broth. Add generous pinches of thyme, majoram and oregano, salt and pepper. Stir until thick. Combine everyhting in a large pot and let cook on very low heat until ready to serve. I serve in my chafing dish.
