1 head red cabbage - about 2 pounds
1/2 cup butter (1/4 pound)
1/2 cup chopped onions
1/2 cup wine vinegar
2 tablespoons brown sugar
1 tablespoon salt
1/2 teaspoon pepper
1 cup water
2 - 3/4 cups sliced tart apples
1/2 teaspoon ginger (optional)

Directions:

Shred the cabbage. Melt the butter in a heavy saucepan. Add onions and saute until lightly browned. Add the cabbage and remaining ingredients and mix lightly. Cover and simmer for about 1 1/4 hours.
