2/3 c mayo
3 T Dijon mustard
2 cloves garlic, chopped
2 T canola oil
1 1/2 lb pork tenderloin
20 slices French Baguette
Olive oil
7 thin slices good smoked ham
7 slices Swiss cheese
40 dill pickle slices

Directions:
Directions:
Mix mayo, mustard and garlic in a food processor until smooth, add salt and pepper to taste. Scrape into bowl and refrigerate for 30 minutes to allow flavors to meld. Preheat oven to 425º. Heat oil in medium sized oven proof pan over high heat. Season tenderloin with salt and pepper. Cook until golden brown (8 minutes or so). Transfer to oven and cook about 15 minutes until done. Remove to a cutting board, tent with foil and allow it to sit for 10 minutes. Slice into 1/4 inch slices. Place bread slices on a cookie sheet, brush with olive oil and bake until slightly crisp, 5 minutes. Turn oven to broil. Cut ham and cheese slices into thirds. Layer a slice of ham, pork and cheese on each slice of bread. Broil to melt cheese. Top each with 2 pickle slices and 1 tsp of mayo mixture.
