1 head of garlic

Drizzle of olive oil

1 can of chickpeas, drained and rinsed

2 tbsp. tahini (sesame seed paste)

1 tsp. salt, plus a pinch for the garlic

1 tsp. cumin

1/4 tsp. cayenne pepper (optional)

The juice of 1/2 a lemon

1. Pre-heat the oven to 400ºF.

2. Peel off the loose outer skin of the head of garlic, leaving only a thin layer of skin on the outside. Slice off the top quarter of the head off, exposing the cloves. Drizzle with olive oil and a dash of salt. Wrap the garlic in aluminum foil and place in the oven until tender and golden brown (approximately 45 minutes).

3. Remove the garlic from the oven and allow to cool.

4. Blend chickpeas, tahini, salt, cumin, cayenne pepper and lemon in a food processor (a regular blender or immersion blender would work well too).

5. Use your hands to squeeze the garlic from the skin and add to the food processor. Blend until smooth.

6. To serve, add a light drizzle of olive oil and pair with fresh vegetables, pita, cheese, crackers, etc.

To store: Add an additional drizzle of olive oil to coat the top, wrap and refrigerate for up to four days.

This is a quick and easy recipe that requires a little bit of preparation when roasting the garlic. For an even quicker recipe, substituted 1 - 2 cloves of fresh garlic and skip roasting it all together.
