Wash the wheat in cool water and discard water.
Steam the wheat in excess water until all the water is absorbed and the wheat is tender, about 35-45 minutes. Spread the wheat thinly on a cookie sheet or shallow pan, and dry in the oven at 200º or dry in the sun until it is very dry so that it will crack easily. Wet the surface of the dried wheat slightly and rub the kernels between your hands to loosen and remove the chaff. Crack the wheat to moderately fine. Store in jars until you are ready for use.

Use as a meat extender in meat loaves, Swedish meat balls or chili.

Cook bulgur for 5-10 minutes. Chill it and use in Cole Slaw.

Soak bulgur over night in salt water and add to bread or yeast rolls for a nut-like flavor and texture and.
