1 cup cream peanut butter
1 cup sugar
1 egg
1 tablespoon toasted wheat germ
1 teaspoon pure vanilla extract
1/2 cup semi-sweet chocolate chips, or more (optional) (I add heaping 1/2 cup of chips)

Directions:
Preheat oven to 350 degrees. Combine all of the ingredients in a bowl and mix by hand until the peanut butter is no longer sticky--3 minute or so. Spoon out in rounded tablespoon-sized balls onto ungreased cookie sheets. (I used the tablespoon scoop). It should come out to about 18. Press down each with a fork. Bake at 350 degrees for about 10-12 minutes, until the bottoms are just turning slightly golden. Let them sit on the pan for about 10 minutes after coming out of the oven and then gently put them on parchment paper over racks to cool completely. I usually double the batch.

Everyone seems to like them and they are so easy to make. I got the recipe from www.penzeys.com.
