"As I ate the oysters with their strong taste of the sea and their faint metallic taste that the cold white wine washed away, leaving only the sea taste and the succulent texture, and as I drank their cold liquid from each shell and washed it down with the crisp taste of the wine, I lost the empty feeling and began to be happy, and to make plans."--Ernest Hemingway

Italian seasoning (approximately 2 tsp)

Directions:
Peel garlic and place in a shallow pan with enough water and oil to roast. It needs to cook until it is soft enough to mash. Lay out the fish filets in a lightly oiled 9 x 13 pan. When your garlic is done, mash it to a paste and measure to see how much you have. Add the same amount of mayonnaise and Parmesan cheese, a dash of salt and pepper. Add the Italian seasoning. Mix well and paste on fish filets. Cover with panko bread crumbs. Bake at 400º for approximately 30 minutes or until fish is done (flakey).
