1 lb. Italian sausage
1 - 32 oz. jar spaghetti sauce
1/2 tbsp. dried basil (or 1 tbsp. fresh basil)
16 oz. small curd cottage cheese (or ricotta)
1/3 cup Parmesan cheese, grated
1 tbsp. parsley, chopped
1 egg, slightly beaten
Pepper (to taste)
8 lasagna noodles, uncooked
8 oz. mozzarella cheese, sliced

If left in the casing, sausage can be cooked in the microwave for about 5 minutes on high in 2-quart glass bowl. Remove casing and break sausage up into small pieces. Or if cooking in a pan, remove from casing, cook on medium-high, breaking up into bits until no pink remains. In a pot, heat spaghetti sauce and basil in pan until bubbly then add the sausage.

In mixing bowl, combine cottage and Parmesan cheeses, parsley, egg and pepper.

Using a 9x13 baking dish, spread 1 cup of the meat sauce to cover the bottom. Arrange 3.5 lasagna noodles on the sauce. Spread half the cheese mixture on the noodles, then 1/2 the mozzarella cheese on top of that spread.

Repeat layering, with meat sauce as the final layer on top. Cover and cook at 350º for 1 hour. Let set for 10 minutes after removing from oven which finishes cooking the noodles.

Serve with salad, bread and wine!

As you know, our preference is to use the Italian sausage from John's aunt Dorothy's "Nick's Grocery" in Port Arthur, Texas (she and his Mom were twins). However, if you don't find yourself in Port Arthur, please use some other brand of Italian sausage instead of ground meat. The Italian sausage makes all the difference!
