Ingredients: 12 oz. linguine 4 tsp. butter 2 tsp. olive oil 1 small onion, finely chopped 5 - 6 cloves of garlic, minced 2 - 14.5 oz. cans tomatoes, chopped (with juice) 1.5 lbs. mussels, scrubbed and debearded 1/4 cup fresh basil, chopped 1/4 cup parsley, chopped Salt (to taste) Pepper (to taste) Cayenne pepper (optional)

Directions:Cook pasta according to package directions until firm, tender. Drain and transfer to a large bowl, add butter and toss to coat.
Meanwhile, in a large skillet, heat oil over low heat. Add onion and garlic and saute for 3-5 minutes (3 if you like a little crunch; 5 if you like soft). Add tomatoes and stir occasionally for 5 minutes or until the sauce is richly flavored.
Add mussels. Cover and cook until they start to open. Start checking after 2 minutes and remove them as they fully open; discard any that do not. When all mussels have opened, return them to the pan. Add basil, parsley, salt and pepper and cook for 1 minute. Add to the pasta, tossing gently to combine. |

Notes: When we have this as our dinner and add garlic bread, this is a two-person meal (with pasta leftover). We do not recommend having left-over mussels. Cooking time goes really fast, so make sure you have all the ingredients measured and ready to go before you begin. We love this meal!!
