"The tradition of Italian cooking is that of the matriarch. This is the cooking of grandma. She didn't waste time thinking too much about the celery. She got the best celery she could and then she dealt with it."--Mario Batali

Ingredients:
Ingredients:
12 oz. linguine
4 tsp. butter
2 tsp. olive oil
1 small onion, finely chopped
5 - 6 cloves of garlic, minced
2 - 14.5 oz. cans tomatoes, chopped (with juice)
1.5 lbs. mussels, scrubbed and debearded
1/4 cup fresh basil, chopped
1/4 cup parsley, chopped
Salt (to taste)
Pepper (to taste)
Cayenne pepper (optional)

Directions:
Directions:
Cook pasta according to package directions until firm, tender. Drain and transfer to a large bowl, add butter and toss to coat.

Meanwhile, in a large skillet, heat oil over low heat. Add onion and garlic and saute for 3-5 minutes (3 if you like a little crunch; 5 if you like soft). Add tomatoes and stir occasionally for 5 minutes or until the sauce is richly flavored.

Add mussels. Cover and cook until they start to open. Start checking after 2 minutes and remove them as they fully open; discard any that do not. When all mussels have opened, return them to the pan. Add basil, parsley, salt and pepper and cook for 1 minute. Add to the pasta, tossing gently to combine.

Personal Notes:
When we have this as our dinner and add garlic bread, this is a two-person meal (with pasta leftover). We do not recommend having left-over mussels. Cooking time goes really fast, so make sure you have all the ingredients measured and ready to go before you begin. We love this meal!!
