3 medium tomatoes, chopped (3 cups)
3 tbsp. olive oil
2 - 3 tbsp. fresh basil leaves, torn (or 2 tsp. dried basil leaves)
2 tsp. capers
1 tbsp. lemon juice
1 tsp. garlic salt
1 clove garlic, finely chopped (2 if you really love garlic)
3 cups rigatoni
1/4 cup Parmesan or Romano cheese, grated

Directions:
Directions:
Mix all ingredients except rigatoni and cheese. Cover and refrigerate approximately 2 hours. Prepare rigatoni as directed on package. Drain and immediately toss with tomato mixture. Serve immediately, or cover and refrigerate until chilled. Sprinkle with cheese.

We add more garlic because we love it. We also use fresh basil and tomatoes from our garden whenever possible. It's a great summer dish! It can be served stand-alone, and if so, count on fewer servings.
