1 - 6 oz. box Uncle Ben's Wild Rice
2 cups cooked chicken, cubed
1/4 cup bell pepper, chopped
2 tbsp. pimento, chopped
1/2 cup mayonnaise
2 tbsp. Russian dressing
3 tbsp. lemon juice (divided use)
2 avocados, diced
Dash cayenne pepper (to taste)

Directions:
Directions:
Cook rice according to box directions, then cool.

Mix rice, chicken, bell pepper and pimento together. Mix mayonnaise, Russian dressing and 1 tablespoon lemon juice together and add to rice mixture.

Pour remaining 2 tablespoons of lemon juice over the avocados and add to rice mixture. Sprinkle in a little cayenne pepper. Serve chilled.

Larry and Lillie (John's sister) Spradley's daughter, Cynthia, brought this to a family cookout. We loved it, (and I don't like cold rice salads!). She did not use cayenne pepper, but I like a bit of spice and suggest you add it too!
