3 tbsp olive oil
1c sm onion chopped
2 Large cans diced tomatoes
2 cloves crushed garlic
salt and pepper to taste
2 Jalapeņos (optional)
1 - 1 1/2 Cups Rice Minute Rice works well but long cooking rice is fine too

Directions:
Directions:
Heat oil in Cast Iron Skillet. Add onion and crushed garlic until heated through. Add rice and toast stirring continuously to prevent burning. Add tomatoes, Jalapeņos, salt and pepper. If necessary add water until skillet is full. Bring to boil and reduce heat to simmer.Cover and let simmer until liquid is absorbed and rice is tender.

I have made this for years and it works well for a quick side dish for almost any type food. I have from time to time used chicken stock instead of water for a very creamy flavor.
