1 1/2 C boiling water
1 C oatmeal (uncooked)
1/2 C butter
1 C white sugar
1 C brown sugar
1 tsp vanilla
2 eggs
1 1/2 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
1 tsp nutmeg
1 1/2 C whole wheat flour
Icing:

1/4 C melted butter
1/2 C brown sugar
3 T cream or canned milk
1/2 C nuts, broken
1 C coconut

Directions:
Directions:
Pour boiling water over oatmeal and let stand 20 minutes. Combine butter, sugars, vanilla, and eggs. Add oatmeal mixture and blend again. Sift together dry ingredients and blend into oatmeal mixture, Pour into greased 9 x9" cake pan. Bake 50 minutes at 350º
Icing for oatmeal cake:

Combine all ingredients and spread on hot cake. Broil in oven until bubbly. Note: Burns quickly, don't walk away from oven!

This is a perfect cake to take along on a picnic! It is rich, dense, and moist! Since it has oatmeal in it some people have been seen eating it for breakfast! However, they choose to remain anonymous.
