2 to 3 tablespoons lime juice (or lemon)
1/2 cup honey
2 eggs, well beaten
1/2 cup heavy cream

Directions:

Add lime juice to honey, stir in eggs. Mix together thoroughly. Cook over simmering hot water untill thickened (mixture becomes clear) stirring constantly. Cool. Whip cream until stiff, then fold into above mixture.

I also make a fruit salad for Christmas dinner. I cut a fresh pineapple in half and scoop out the insides. Cut the pineapple meat into small pieces and add bananas, oranges, a couple of cans or jars of canned frit salad and then return the cut fruit to the pineapple halves. Place halves on a large serving platter. Make this lime honey dressing and pour over the top of the fruit just before serving.
