Ingredients for Meatballs

2 ½ pounds of ground beef (not to exceed 15% fat)
1 egg
2/3 cup of white rice (rinse and drain)
¼ cup of finely chopped onion
½ teaspoon of Lawry’s Seasoning Salt
½ teaspoon of black pepper
½ teaspoon of salt
1 garlic clove

Chopped Ingredients for Stew:

3 carrots
2 celery stalks
3 zucchinis
3 Mexican squash
4 potatoes
1 chayote
1 tomato
½ onion
1 teaspoon of salt
¼ teaspoon cumin
¼ teaspoon amarillo (optional)
2 tablespoons of cilantro

Directions:
Directions:
Combine ground beef, egg, white rice, onion, seasonings, ½ teaspoon of salt, black pepper, and salt. Mix well. Set water (1 gallon/3.75 Liters) to boil in a large pot. Shape mixture into meatballs. Place meatballs on a warm skillet (no need to add oil) and brown for 3-4 minutes (just enough to solidify so they don’t fall apart when you boil them in the next step). Place the browned meatballs in the pot of boiling water and cook on medium heat. Add 1 garlic clove, 1 teaspoon of salt, and skim fat while meatballs are cooking. Boil for 25 to 30minutes. Add chopped veggies to pot.

Add about ¼ cup of onion, ½ of a tomato, 1 cup of the soup of the albondiga/veggie mix in a blender, add ¼ teaspoon of cumin and amarillo, blend well. Add to the pot, at this point, taste albondigas to see if you need to add more salt.

Boil Albondigas for another 12 to 15 minutes (or until potatoes are cooked).
