12 slices of sandwich bread, crusts removed
butter for bread
1/2 lb. fresh mushrooms, sliced
1 bunch green onions, chopped
1-1/2 lbs. sausage links, cooked, drained and cut into bite sizes
1 lb. cheddar cheese, grated
2 T. finely chopped, fresh parsley
liquid mixer:
5 eggs
3 tsp. Dijon mustard
1 tsp. dry mustard
1 tsp. nutmeg
1/4 tsp. salt
1/8 tsp. pepper

Directions:

Butter the bread and place 6 slices in the bottom of a buttered casserole (9 X 13). Top with 1/2 mushrooms, onions, sausage and cheese. Repeat another layer of 6 slices, then mushrooms, onions, and sausage, ending with cheese.
Pour the mixed liquids over the casserole, cover and refrigerate overnight.
When ready to bake, sprinkle the parsley over the top, uncover and bake 1 hour in a 350º oven. Serves 8-10.

Sweet Gracie Rimkus gave me this recipe that she said came from California. Her husband, Anthony, grew up in Philadelphia, an only child of an Italian chef. Tony made the most gorgeous altar for our church this past year. He and I were on the "pew" committee which entailed visiting this shack of a building in St. Joe, AR!

I don't know what you could use in place of the bread... rice would swell?
