1-2 cups cooked chicken finely chopped
1 cup fresh corn kernels or 1 cup frozen corn
2/3 cup (5 oz) goat cheese (softened)
8 - 6 inch corn tortillas
1/4 cup chopped green onions
1/4 cup chopped cilantro
1 fresh chopped tomato
8-10 tbl salsa verde

Directions:
Directions:
Heat a large nonstick skillet over medium-high heat.

Add corn and saute' 2 minutes or until browned. Place corn in a small bowl.

Add goat cheese to corn; stir until well blended.

Divide corn mixture evenly among 4 tortillas; spread to within 1/4 inch of sides. Sprinkle remaining ingredients on top of mixture and top with remaining tortillas.

Coat pan with cooking spray and brown tortillas (1 to 1-1/2 minutes on each side). Wipe pan clean and re-spray for remaining tortillas.

Cut into 4 wedges and serve.
