Approx. 4 cups of diced ripe plum tomatoes or (grape tomatoes)
2 tablespoons of freshly peeled and chopped garlic
1 cup of extra virgin olive oil
Freshly ground pepper to taste
Salt to taste
½ cup fresh basil

Put all ingredients in a mixing bowl, mix together, cover and leave in refrigerator over night. Ready to prepare…take extra virgin olive oil and cover bottom of sauce pan and heat, add ingredients from mixing bowl to the hot oil stir thoroughly, lower heat and simmer sauce…cook for ½ hour then ready to serve over pasta or add to seared fish…Chef Enzzo’s suggests serve with fish over bed of pasta, sautéed vegetable-(spinach) or both! Buona Appetite!

Chef Enzzo suggests this is wonderful for many fish filets, shrimps or with any of your favorite pasta.
