8 large eggs, beaten
1 package frozen spinach
1 shallot, minced
1 T. garlic, chopped
1 red pepper, chopped
8-10 pitted kalamata olives
1/2 -1 cup bacon, turkey bacon, or sausage, cooked, drained, and chopped
1/2 cup shredded cheese (cheddar, parrano, swiss, feta or goat)

Preheat oven to 350º. Put a small amount of olive oil in a frying pan and saute the onions over medium heat. When lightly browned, add garlic and red pepper and saute a few more minutes. Meanwhile, in a 9" glass pie plate, microwave the frozen spinach on high for 5 minutes. Drain cooked spinach to get out as much water as possible. Dry pie plate with paper towel, and then spray generously with Pam or other cooking spray. Spread spinach over the bottom of pie plate. Top with sauteed vegetables, then meat, then olives, and finally cheese. Carefully pour the beaten eggs over. Bake in oven for at least 20 minutes, making sure that a knife comes out clean from the middle and that frittata is set. Cool 5 minutes and then serve.

As you can tell from the ingredients list, you can use any kind of meat (or no meat at all), any cheese, any vegetables. You really can't miss. This is a great dish to make for brunch, when you want to use up left-overs, or don't know what to make for dinner. Individual slices can be reheated in the microwave for a quick and hearty breakfast.
