Ingredients:  
2 c flour
1 tsp salt
2/3 c shortening
6 or 7 T cold water
Gently knead together, divide in 1/2, refrigerate til chilled, roll out for top and bottom crusts.
Make lemon filling.
Lemon Filling:
1 & 1/4 c sugar 2 T flour
1/8 tsp salt
Combine above ingredients, then blend in:
1/4 c soft butter
3 eggs, well beaten
1 tsp lemon rind
Heat over stove until thick, stirring constantly. Pour into prepared pastry lined pan. (8")
add top crust
Brush with beaten egg white & sprinkle with sugar & cinnamon.

Bake 400 degrees 30-35 min.
Peel 1 lemon & cut into paper thin slices (about 1/3 cup)
Add 1/2 c water, rind, sugar mixture & blend well. Bring to a boil and let simmer until thick like syrup. Cool and serve over top of sliced pie. Add a dollop of whipped cream.
