2 lg. sweet potatoes, washed & patted dry
1 tsp. olive oil or olive oil spray
1/4 tsp. salt
1/4 tsp. crushed dried rosemary
1 rosemary sprig for garnish (optional)

Directions:
Directions:
1. Preheat oven to 425ºF. Cut each sweet potato into 8-10 lengthwise wedges and place on a sprayed nonstick baking sheet.
2. Drizzle wedges with olive oil or spray. Sprinkle with salt (I like to use a sea salt grinder) and dried rosemary.
3. Roast 15 minutes, toss and roast until potatoes are tender, about 15 minutes more. Spoon wedges onto serving plate and garnish with fresh rosemary.

*Our whole family likes these ~ Great way to get kids to eat their veggies. Our son likes to dip them in ketchup.
*Can leave rosemary off if kids don't like it.
